Fresh orchids • Young greens • Wild herbs • Green apple • Citrus blossom

Every masterpiece begins as a sketch.

Size

about 10 mugs or 5 gongfu sessions

Tie Guan Yin Mao Cha is tea in its most honest form -alive, vibrant, and still becoming. Without the final roast, its green heart remains untouched, revealing orchids, fresh herbs, and the brightness of early spring.

In Chinese, Mao Cha means “unfinished tea.” For many producers, it is a step on the way to something else. For others, it is already complete - precisely because nothing more has been added.

Like an artist’s notebook or a musician’s rehearsal, it reminds us that beauty doesn’t always arrive polished.

BREWING GUIDE

Gongfu Cha: 5–6 g / 100 ml · 85–90°C · 10-20 seconds, up to 6–7 infusions
Delivers a vibrant, crisp freshness that gradually unfolds into a beautiful floral profile.

European style: 3 g / 250 ml · 85°C · 2-3 min
Smooth, steady, and aromatic for a daily brew.

TASTING PROFILE
FERMENTATION & OXIDATION

Tie Guan Yin Mao Cha skips true micro-organic fermentation and long-term roasting. Instead, it relies on a delicate touch of partial oxidation (15–30%).

Process:
Harvesting mature leaves, withering, partial Oxidation (15–30%), rolling, drying (without extended roasting or aging)

Think of it like letting a sliced piece of fruit breathe the air just long enough to start softening and sweetening, but stopping it before it darkens. Because the leaves are only lightly oxidized and left unroasted, the tea remains beautifully green, vibrant, and bursting with raw life.

STORY & SOURCING

Tie Guan Yin is the legendary “Iron Goddess of Mercy” and the ultimate symbol of Fujian oolongs. Mao Cha is its “raw portrait” - tea caught in a beautiful moment of incompletion, much like an artist’s rough sketch.

It is deeply loved for its honest, straightforward flavor, showing you the true nature of the leaf without the polished finish of final roasting.

FOOD PAIRING

We always recommend sipping all our teas solo to appreciate its pure, unmasked character. But if you wish to pair it with a bite, choose mindfully :)

If you’re pairing, try these:

Fresh fruits (apple, pear, citrus)
Green salads with light dressings
Light desserts (cheesecake, yogurt mousse)

feels like:

a notebook with empty pages and curiosity in full bloom

Before water. After water.
