Fresh spring flowers • Melon • Mint • Raspberry • Wildflower pollen

The house is still asleep. Morning light slowly fills the room. The kettle begins to sing. Windows are open just enough to let fresh air drift inside. Nothing needs answering yet.

Size

about 10 mugs or 5 gongfu sessions

Picked only during the first days of spring, Silver Needle is made entirely from unopened buds covered in soft white down. With almost no processing, it preserves the freshness of the season exactly as it arrived. A cup for gentle beginnings, quiet mornings, and arriving softly into the day.

BREWING GUIDE

The ritual (Gongfu Cha):
to protect the fragile nature of these spring buds, cool your fresh water to 85°C. Place 4-5 grams of the downy silver needles into a clean porcelain gaiwan or a glass vessel per 100 ml. Pour the water gently down the side of the vessel rather than directly on top of the buds. Let them steep for 15-20 seconds on the initial round. Over 5-6 infusions, you will experience a slow, poetic unfolding of light floral and crisp orchard notes that grow sweeter with each press.

The cozy mug (western style):
for a peaceful, low-maintenance morning, place 3 grams of loose needles into a warm glass mug with 250 ml of 80°C water. Allow the silver needles to dance, float, and sink slowly for 2–3 minutes. This gentle infusion yields a beautifully clear, delicate brew that feels like a quiet sigh of relief in your hands.

TASTING PROFILE

Body: Exceedingly light, delicate, and inherently sweet, carrying crisp whispers of fresh grass, young cucumber, and a soft, pillowy texture.

Liquor: luminous, pale platinum-gold that remains almost entirely transparent, shimmering softly in the cup.

Finish: clean, washing over the palate with a gentle, refreshing cooling wave and a lingering trace of honeyed pollen.

FERMENTATION & OXIDATION

Morning Dew is celebrated for its radical simplicity, bypassing almost all traditional manipulation to undergo minimal, natural oxidation (around 5 -15%).

The freshly plucked, downy buds are never rolled, shaken, heated, or subjected to true micro-organic fermentation. Instead, they are simply spread out to wither under controlled sun or air currents and then dried. This entirely passive craft gently stops the natural oxidation process while it is still in its infancy, beautifully locking in the leaf's exceptionally high concentration of amino acids, chlorophyll, and delicate essential oils.

STORY & SOURCING

Revered for centuries as an imperial treasure, Bai Hao Yin Zhen - which translates to "Silver Needle with White Down" - was historically harvested exclusively for the emperor's court.

It is composed strictly of pristine, unopened spring buds, hand-plucked during the fleeting first days after the tea bushes awaken from winter. Daoist monks traditionally treated these silver needles as an elixir of longevity and mental purity, a tribute to a landscape untouched by haste.

FOOD PAIRING

We always recommend sipping all our teas solo to appreciate its pure, unmasked character. But if you wish to pair it with a bite, choose mindfully :)

If you're pairing, try these:
- Delicate fruits like sliced honeydew melon, crisp pears, or sweet white grapes.
- Soft, creamy cheeses with a mild profile, such as fresh mozzarella or ricotta.
- Light, honey-drizzled treats that subtly echo the tea's natural pollen sweetness.

feels like:

The quiet hour before everyone wakes up. It brings a sensation of tenderness, delicate silence, and an expansive inner space. It is a slow, weightless awakening that gently opens up your senses without a jolt, like stepping into a fresh garden just after dawn.

Before water. After water.

When to drink:

Early mornings, immediately following yoga, meditation, or somatic practices, and during hot summer days when you need a deeply delicate, cooling reset.
